Champagne and Sushi! This is one of my go to pairings with champagne. It is always a crowd pleaser and champagne can go well with all styles of sushi.
The soils in champagne are Calcaerous and Limestone soils and the sea used to be present millions of years ago. This means champagne has an incredible salintiy especially Blanc de Blancs from the Cote des Blancs.
I have enjoyed this pairing many times and it is always an easy and go to pairing for me. Sashimi is always a good chose and pairs perfectly with champagnes of many styles.
From Le Mesnil sur Oger a Grand Cru village in the Côte des Blancs - the home of Chardonnay - super complex , chalky, honey, citrus , toasty- not your typical Côte des Blancs in a good way - Dosage 3 g/l
Paired with @eplusmon Northern Lights salmon on spicy tuna, microgreen, avocado, sesame, cucumber, lemon breeze
Finally checked out @sushisushibeverly and I don’t know what took me so long! Monkfish, 🦪, 🍣 and 🍾 - the makings of a perfect lunch! Paired excellently with this 2002 La Grande Année from @champagne_bollinger . La Grande Année is an excellent vintage from Champagne Bollinger a blend of 60 Pinot Noir / 40 Chardonnay from both Grand and Premier Cru villages. It was in an excellent spot - golden apple, honey, biscuit, nuttiness - well rounded mouthfeel. It was great to do a side by side comparison with different glasses as it definitely proves that glassware makes a difference!
