Making Soul of a Lion is not an easy feat. In order to make Soul of a Lion you need to have perfect ripeness on the vine; without it you will not have the structure, tannin, or balance needed in a quality wine. The grapes must be harvested at the right time and when a nine day heat wave hit California in August 2017 the grapes were not at the optimal quality needed to produce Soul of a Lion. Shortly after the heatwave, the weather dropped to a moderate 60 degrees.
Two thirds of the grapes were harvested in late October resulting in 2,500 cases of Soul of a Lion. The Newly Released 2017 Soul of a Lion is an extraordinary vintage highlighting the terroir of Daou Mountain and the tenacity of Georges and Danny Daou. The wine is full-bodied with high tannins and a persistent finish. The Cabernet Sauvignon dominant blend is drinking very well and has the potential to age for the next thirty years.
There are notes of cassis, black currant, ripe plum, licorice, and vanilla. The wine pairs with a range of savory dishes from truffled pasta to a juicy ribeye to a delicious roasted lamb.
